Ginger Kickn Spice Roasted Carrots & Sweet Potatoes

Ingredients
- 3–4 medium carrots, peeled and cut into sticks
- 2 medium sweet potatoes, peeled and cubed
- 3 tbsp coconut oil, melted
- 1½ tbsp fresh ginger, finely grated
- 1½–2 tsp Kickn Spice
- 2 tbsp cane sugar
- ½ tsp nutmeg
- 1 tsp salt (pink Himalayan if preferred)
- ½ tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss carrots and sweet potatoes with coconut oil, ginger, Kickn Spice, cane sugar, nutmeg, salt, and pepper until evenly coated.
- Spread in a single layer on a parchment-lined baking sheet.
- Roast for 35–40 minutes, stirring halfway through, until veggies are caramelized and tender.
- Serve hot, optionally garnished with fresh parsley.
