Roasted Carrots & Sweet Potatoes

Ginger Kickn Spice Roasted Carrots & Sweet Potatoes

Prep Time: 10 minutes   |   Cook Time: 35–40 minutes   |   Serves: 4–6

Ingredients

  • 3–4 medium carrots, peeled and cut into sticks
  • 2 medium sweet potatoes, peeled and cubed
  • 3 tbsp coconut oil, melted
  • 1½ tbsp fresh ginger, finely grated
  • 1½–2 tsp Kickn Spice
  • 2 tbsp cane sugar
  • ½ tsp nutmeg
  • 1 tsp salt (pink Himalayan if preferred)
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss carrots and sweet potatoes with coconut oil, ginger, Kickn Spice, cane sugar, nutmeg, salt, and pepper until evenly coated.
  3. Spread in a single layer on a parchment-lined baking sheet.
  4. Roast for 35–40 minutes, stirring halfway through, until veggies are caramelized and tender.
  5. Serve hot, optionally garnished with fresh parsley.
